Green Onions
The band that shaped the Stax sound not only was prolific in the line of duty (playing on a massive bunch of Stax's releases), but also released a couple of albums themselves. This, their debut, was caused by jamming in the studio, getting the Green Onions single. It sold a million copies, leading to the album being recorded and released within a short while.
All instrumental with only three original songs and nine cover versions of tracks where the originals mostly were made with vocals some (sourpusses) might argue that this is also a precursor to muzak. And while it's true that at some points it almost gets a bit cheezy with the organ playing the vocal melodies, they manage to keep it on the good side of "almost".
